In my never-ending quest to find pasta alternatives, I found this small batch pasta company that makes spaghetti and fettuccine out of... beans. They use black beans, edamame and soybeans, to be exact. Now, here's where it gets interesting: they're only made with one ingredient. Yep. No wheat, no flour, no eggs and no binding agents. How does that work, you might ask. "Wonderfully" is the answer!
This plant-based, GMO-free, gluten-free, organic pasta is also kosher. And ridiculously high in protein, antioxidants, and fiber, while shockingly low in carbs. It's got 3X the protein, 6X the fiber and less than 1/2 the carbs of average pasta. Additionally, it's a complete protein, which contains all of the essential amino acids that our bodies cannot synthesize itself, making it one of the best sources of protein. Beans are also high in antioxidants, fiber, B vitamins, iron, magnesium, potassium, copper, and zinc. One more thing: beans are the only cultivated plants that enrich, rather than deplete, the soil during the growing process. They also provide the most protein per acre, twice as much as most vegetables.
