Jack Rudy began developing their Lavender Bitters as an accompaniment to their Sweet Tea Syrup, and as lighter alternative to a more robust Aromatic Bitters. They found a beloved cocktail called “The Daytripper” and Lavender Bitters were an essential element. Working with Cocktail Punk in Colorado, they had access to gorgeous domestic lavender that was the perfect component to their foray into a more aromatic bitters expression.
Like lavender itself, these bitters are elegant, subdued and modern; they are a fresh take on a classic ingredient, and will be right at home with Vodka or Tequila, and bring a freshness to a traditional Gin & Tonic.
As an on-again/off-again bartender for almost 20 years, I can tell you this: a collection of bitters is like a spice cabinet for your bar. Get some; play around with the flavors. Have fun.
