THE RILEY/LAND COLLECTION
The day I asked my people who was interested in these raw, organic simple syrups from France, I ended up with pre-orders for more than two dozen bottles. And when they arrived, the response was unanimous - they're winners. Super concentrated, with excellent flavor representations. Bacanha was founded in 2013, and they have worked hard to create the ultimate blend for these syrups. The base of the raw syrup is a certified organic pure cane sugar from South America. Then, they infuse flavors into the syrup, with the goal of reaching the ideal balance between pH and brix, ie acidity and sugar level. Most of the raw syrups have a pH of less than 4.5 and a brix around 60°. None of that last part makes sense to me, but goes to show that they put real time in doing research to get the perfect blend.
Bergamot syrup by Bacanha is an aromatic concentrate of this citrus fruit from the bergamot tree, native to the Mediterranean basin. The taste is tangy, fruity and its lemony scent is unique. Bergamot raw syrup can be used in your smoothie, cocktail or lemonade recipes. It can also be used in your favorite recipes such as cocktails and iced teas. I made an amazing old fashioned with this one and love it. I also have designs to do a layer cake with this syrup brushed between the layers.
