
The day I asked my people who was interested in these raw, organic simple syrups from France, I ended up with pre-orders for more than two dozen bottles. And when they arrived, the response was unanimous - they're winners. Super concentrated, with excellent flavor representations. Bacanha was founded in 2013, and they have worked hard to create the ultimate blend for these syrups. The base of the raw syrup is a certified organic pure cane sugar from South America. Then, they infuse flavors into the syrup, with the goal of reaching the ideal balance between pH and brix, ie acidity and sugar level. Most of the raw syrups have a pH of less than 4.5 and a brix around 60°. None of that last part makes sense to me, but goes to show that they put real time in doing research to get the perfect blend.
I've discovered that a lot of people don't know what yuzu is - it's an East Asian citrus fruit that's a hybrid of the mandarin orange and the relatively rare ichang papeda. I, personally, love anything yuzu. It's kinda tangy, with a slight lemon-y scent.
Ingredients of organic yuzu syrup: pure organic cane sugar, water, natural flavor, acidify: citric acid.
