When I opened in 2013, I sold Ravida Oilve Oil, a staple at Williams-Sonoma and my favorite of their extensive line of olive oils. In my head, I would emulate that concept. It didn't work. My business pivoted fairly early on, when I realized my clientele liked to try new things, explore different flavors, and experiment with newer brands.
But every few years, I go on a search for a new olive oil for us. Mainly because I wanted to try something new - and I know my people will as well. This time around, I came across Piro, a Tuscan-based olive oil company that has 300-year-old olive trees. Here, let me let them tell you their story:

Our proprietary double filtration milling system developed in cooperation with the italian Consiglio Nazionale delle Ricerche yields a sophisticated Extra Virgin Olive Oil with a rich taste and an unusually high level of healthful antioxidants.
Everything we do, from hand-picking our olives to guard them from bruising to writing the harvest date by hand on each bottle, is designed to bring you an unparalleled fresh tasting product from our mill to your table.
