Miso Maple Bacon

Years ago, Chef Lisa Fernandes made miso maple bacon on Top Chef, and the judges didn't just like it, they raved about it. And I love miso. And bacon. I don't really love maple, but I can roll with it when needed. And, it makes sense for this recipe. This isn't Fernandes' recipe, but it's a close approximation.

Ingredients

  • 1 pound thick-cut bacon
  • 3 tablespoons miso glaze
  • 2 tablespoons maple syrup
  • 1 teaspoon rice vinegar
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Line a baking sheet with parchment paper and arrange the bacon in a single layer.
  3. In a small bowl, whisk together the miso glaze, maple syrup, and rice vinegar.
  4. Brush the mixture lightly over the bacon.
  5. Bake for 15 minutes, then brush once more with the glaze.
  6. Return to the oven for 5 to 10 minutes more, until glossy and caramelized.
  7. Finish with black pepper and serve warm.

Serving Notes
Serve alongside eggs, folded into breakfast sandwiches, or crumbled over roasted vegetables.
