Vindaloo has Indian-Portuguese roots, but is known for its British preparation. Vindaloo is typically served in stewed curry form, with rice. It pairs well with, literally, any protein, from chicken to beef to pork to fish to lamb to shrimp. Basically, you can do anything with this blend.
